There is no lack of food.
Seems it was opportunism.
The next step is a state of siege.

Our Chinese closed randomly last Wednesday. Seemed odd, has a sign saying 'closed for vacation'. Not sure what's going on.

I understand what you're saying and I could be totally naive but I don't think so? Because everyone who shops there does it out of necessity and we're therefore grateful for them. Well I certainly do hope it's not the case anyway. I thought this would be a fairly good time for them business-wise.
